Clear tapioca noodles soup from the city of My Tho, located in the Mekong Delta region of Southern Vietnam. Toppings include thin slices of: pork’s heart, liver, gizzards and garlic caramelized pork tenderloin, seasoned ground pork, shrimp and crab claws. As for the greens: beansprouts, Chinese Chives, celery hearts, and/or Chinese celery. And as a condiment, minced garlic in brine and pickled chili peppers. Yes, definitely a labor of love.
