Pandan Coconut flavored Waffles

Leprechuan Waffles!! Okay – Asian pandan waffles in honor of all our Irish friends on this St. Patrick’s Day! And – they are naturally green! (unlike all that green beer. LOL)

List of Ingredients:
1 tsp Pandan Extract
1 Cup Water
5 Cups of Tapioca Starch
3 Tbsps of Rice Flour
½ tsp Salt
1 tsp Baking Powder
1 ½ Cups of Coconut Milk or Cream
2 Large Eggs
2 Tbsps Canola Oil
½ Cup Granulated Sugar
1 cup of Grated Coconut

Cooking Instructions:

Dilute ½ tsp of Pandan extract with
1 Cup of water in a pitcher with 5 Cups of Tapioca Starch
Add 3 Tbsps Rice Flour
½ tsp Salt
1 tsp Baking Powder
1 ½ Cup Coconut Milk or Cream
Pour in the diluted Pandan water
To rinse out the coconut cream
And pour it in and give it a whisk
Add in 2 large eggs
Add in 2 Tbsps Canola oil
Stir again
Pour in ½ Cup Granulated Sugar
Stir well to ensure a smooth batter consistency.
And finally add in 1 cup of grated coconut

Once your Waffle maker heats up
Brush lightly the grill with some cooking oil
Pour in your batter and cook it for 3 minutes.
And voila!
