About that grilled squid the other day… it’s so, so, so good with my spicy, garlicky, ginger fish sauce. Recipe for the fish sauce below. As for the squid? Simply marinate it with some calamondin (lime or lemon) leaves, crushed garlic, a pinch of salt, a dash of sugar, drizzle of EVOO and for a kick some crushed Thai chili pepper… then grilled until slightly charred and the meat goes from translucent to solid white…. happy eating!
