Jn Bánh Khọt Banh Khot – Vietnamese Mini Sizzling Shrimp Crepes in Victoria Cast Iron Mini Dutch Oven

Vietnamese sizzling mini-crepes in a Victoria cast iron mini Dutch oven. Such a fun treat! Even better when you have the proper tools. I recently fell in love with these little cast iron pots. They’re perfect for a bigger size Banh Khot – and don’t you love the presentation to give it that “WOW” factor? I always have fun playing with my food. Especially, when it comes to my love of cooking with crustaceans that happen to be on sale!!! LOL.

List of Ingredients:
1 Cast Iron Skillet
1lb of Shrimp Size 31/40
½ Cup of chopped Green Onions.
1.5 Cups of Rice Flour
3 Tbsps of Tapioca Flour
1 tsp Baking Powder
1 tsp Turmeric Powder
1 400ml (14oz) Coconut Cream
1 Tbsp Corn Starch
3 Tbsps of Vegetable Oil
1 355ml (12oz) Can of beer
And ¼ tsp of Salt

Nuoc Mam Cham – our pre-mixed diluted Fish sauce
Combine the following and stir until completely dissolved:
• 1/2 Cup water
• 2 Tbsps Fish Sauce (3 Crabs Brand)
• 3 Tbsps Sugar
• 1 Tbsp Vinegar
• ¼ tsp salt
• Thai chili for a kick
