I have always loved Hainanese chicken and like many, probably felt intimidated to recreate it at home. So, I rolled up my sleeves, pinned up my hair and put on my apron and took the challenge. And VOILA! Chicken, broth and the subtle scents in the full-flavored rice are deliciously satisfying! Check it out – you can DO this too!
Jn Hainanese Chicken
Serving: 4
4lb Chicken
Salt (for exfoliating)
4 Slices of Ginger
4-5 Garlic Gloves
2 Green Onions
Roasted Sesame Oil
Broth Seasonings:
1 Tbsp Chicken Bouillon Powder
1 tsp Salt
2 tsps Sugar
Garnish with Mixture of Cilantro & Green Onions
Ginger & Scallions in Oil:
¼ Cup Canola Oil
½ Cup Minced Ginger
1 ½ Tbsps Minced Garlic
1 tsp salt
¼ Cup Chopped Green Onions
Hainese Rice:
1 Cup Jasmine Rice
½ Glutinous Rice
1 ½ Cup Chicken Broth
1 tsp Salt
4 Slices Ginger
1 Garlic Bulb
2 Tbsps Butter (or EVOO)
1 Bunch of Pandan Leaves (Optional)
Side Suggestions:
Chili Oil
