Wonton Wednesday

Wonton Wednesday? Why not? When they are this tasty they deserve a day of the week.
Here, once again, is my recipe for shrimp wontons. I’m proud to say, when I make it for my Dad, he always tells me “you make the best wontons!” lol Awe thanks, Dad! It means a lot coming from him because he’s an excellent cook himself.

While I do love the shrimp mousse wonton, I also love the surprise chunks of shrimp in the wontons when you bite into them. So, if you’re like me, you’ll enjoy this recipe. So, let’s get cooking!

Filling Ingredients:
½ lb Peeled & Deveined shrimp (whole)
½ lb Shrimp cleaned and chopped
1 Package of Thin wonton wraps
1 Tbsp Fish Sauce
1 Tbsp Sesame Oil
1 Tbsp Sugar
¼ tsp Ground Pepper
About 7 Green Onion Tips Chopped

Broth Ingredients:
Julienned onion tips
2 Tbsps of vegetable oil
1 Tbsp fish sauce
1 Tbsp sugar
2 Cups water
1 carton of chicken stock (1L) (or you can use 5 tsp of Lee Kum Kee Chicken Bouillon Powder to 5 Cups of water)
(Taste test and adjust to your preferences)

Filling & wrapping Instructions:
Add the ½ lb of whole shrimp, fish sauce, sesame oil, sugar and ground pepper to a mixing bowl.
Using a hand blender, process your shrimp to a paste.
Add in the chopped shrimp & green onion tips and mix it into the paste.
Now let’s wrap the wontons. Watch the video below to see how to wrap them in different ways.
Or you can simply do the easy way.
Place in about 1 tsp of the filling into the wrappers, dampen the area around the filling and just pinch them together. Continue wrapping until all the fillings are used.

Cooking the wontons:
In a large pot bring your water to a boil
Add 2 Tbsps of cooking oil (this will help keep them from sticking together while cooking)
Place in the wontons and cook for about 2-3 minutes or until they start floating to the top.
Then place them into a container and brush on some cooking oil.

Preparing the broth:
In a 2 ½ quart pot add in the chicken stock.
Turn heat on high and bring it to a boil… then reduce the heat to a low setting to simmer.
Season the broth with sugar and fish sauce to suit your taste.

Now, let’s prepare the flavoring for the broth.
In a small skillet drizzle about 2 Tbsps of oil
Turn heat on high.
Add in the onion tips to brown.
Continuously stir to prevent burning.
Once browned add to the broth pot.

Garnish with mixed chopped green onions, cilantro, fried onion flakes and chili paste for a kick.
Also, if you like – place on some fresh sugar pea tips or bok choy.
